My name is Pam and I suffer from a wide range of symptoms.  Some are long term, while others are quite new and some are even intermittent.

For most of my life, I have endured chronic back pain.  My muscles are always extremely tight and from the time I was a teenager, I started putting my back out from time to time to the point where I was completely immobile.  Now I seem to do this like clockwork every year.  My husband even puts his out, often right at the same time.  It's the strangest thing.  I like to think it's because he loves me so much and doesn't want me to suffer alone.  It definitely makes you wonder if there's a correlation between something in our atmosphere or diets that is causing it.  Within the past couple of years I have even extended my back issues to putting my neck out while I'm sleeping (who knew you could do that).  Two expensive pillows later, ongoing chiropractic care, and regular massage therapy, and my neck is pretty good most of the time, but never perfect.


When I was in my early 20's, I developed an intolerance to lactose, particularly highly processed ice cream.  It was so bad that one bite of my beloved Dairy Queen Ice Cream would give me massive stomach cramps and explosive diarrhea.  I tried to eat it from time to time, but eventually avoided it at all costs.  After years of avoidance, I seemed to be able to eat dairy again.  However, I am back to where I was and can no longer tolerate dairy products.  It's very frustrating, as it's in EVERYTHING!  I thought gluten was hard to cut out.  I would say that dairy is a close second.

About a year ago, I developed a mild case of carpal tunnel syndrome.  My husband also developed this about 2 years ago.  Yet another thing that we have in common.  His was caused from cutting metal over and over as a sheet metal mechanic and mine from too much time spent on the computer (I'm a graphic designer).  This annoyance seems to come and go.

Also, going back a year, I started getting chronic loose stools (close to diarrhea), bloating, and awful smelling gas.  It just started out of nowhere.  I thought that it could be a parasite from a trip to Punta Cana, but after several stool samples, blood work, and a physical, my doctor determined that I was in perfect health.  He said that my symptoms were most likely dietary.  He also suggested that I might have developed IBS (irritable bowel syndrome).  After reading a pamphlet describing the disorder, I thought he might be onto something.  I tried cutting out dairy, then wheat (from time to time).  My symptoms improved, but I still had unexplainable problems.  I just couldn't seem to find a pattern with what I ate and my symptoms.  Which brings me to where I am today.  I needed to take drastic measures.  Since I have a friend with her own list of problems, we decided to start the Elimination Diet together, so we can keep each other on track and share meal ideas.

I hope our meal ideas and experiences can help you to heal your body and improve your symptoms.  There are too many people suffering today and it makes sense that it is related to our diets.  Food has changed so much over the past several years.  I'm not sure we can even call it food anymore.  I think it just might be a slow poisoning.
