This morning, I made the worst combination ever.  It sounded good in theory, but was terrible.  I spend all morning trying to nibble at it.  Thankfully, my friend saved me with the most delicious Turkey Soup I have ever had (she is also doing the elimination diet).  I will definitely get her recipe and add it to this blog.

So, here is the offending combination:
  • Apple Sauce
  • Bee Pollen (I think this made it too tart)
  • Ground Flax, Chia, & Buckwheat
  • Quinoa Puffs (these are pretty good on their own...might be good with coconut milk)



I think part of the problem was that the texture of the quinoa puffs and the apple sauce simply didn't mesh.

Now, I know that marshmallows are not part of an elimination diet, but as a fun treat once in awhile for the kids, you can make Quinoa Squares like you would Rice Squares.  And quinoa is full of protein, so it's a great thing to get into your family's diet.

Here is a breakfast combination to try:

Quinoa Porridge 1
  • 1/2 cup Cooked Quinoa
  • 1 tsp Apple Butter (Apple Butter is very sweet and made only from apples)
  • 2 tbsp blueberries
  • 1 tbsp water

Heat ingredients till warm.



Quinoa Porridge 2
  • 1/2 cup Cooked Quinoa
  • 1 tsp Apple Butter (Apple Butter is very sweet and made only from apples)
  • 1/2 tsp Cinnamon
  • 1 tbsp water

Heat ingredients till warm.


The next recipe is not bad.  Not sensational, but not bad.

Quinoa Smoothie

  • Blueberries
  • Raspberries
  • Apple Juice
  • Cooked Quinoa
  • 1 tsp Apple Butter

LUNCH IDEAS TO TRY

Salmon Mix

  • Can of Salmon (packed in water; no salt)
  • 1/4 - 1/2 Red Onion, finely chopped
  • 1 Tbsp Fresh Dill, finely chopped
  • 1 Tbsp Olive Oil
  • Herbamare to taste



Herbed Cucumbers

  • Cubed Cucumber
  • Fresh Dill
  • Olive Oil
  • Herbamare

Mix well.

Cooked Beets

  • Preheat Oven to 350 degrees F
  • Peel & cut up beets into 1" cubes
  • Place in Corningware Dish
  • Put 2-3 tbsp water in the bottom of the dish
  • Cover with Tin Foil
  • Cook about 1 hour

Try eating alone or adding to salad.

Here's a good snack if you like Celery.  Try spreading Sunflower Seed Spread on your Celery.  Make sure it is made with just sunflower seeds with no added sweetners.
