I highly recommend this food dehydrator.  It is by far the best and a must have for healthy eating.  Most dehydrated foods are full of nitrates and other unsavory ingredients.  The Excalibur makes fantastic food and has a fabulous warranty.
  • Banana Chips (make sure they are very ripe - tastes like candy)
  • Apple Chips (try with cinnamon on top)
  • Fruit Leather (try using apple sauce)
  • Dog Treats (sweet potato, meat, etc)
  • Jerky (beef, venison, etc.)
  • Vegetable Spices (dry your veggies & put in a food processor)
  • Rising Bread
  • The options are endless

Posted by Pam Timmermans on Monday, June 3, 2013, In : Recipes & Meal Ideas
Oh wow, this might be the best tasting smoothie I've ever made!!!  It's so sweet and delectable.  The subtly of the pear with the mango is such a great flavour combination.

Pear Mango Smoothie

I used a regular sized blender for this recipe.

  • 1 Mango
  • 1 Large Pear
  • 1/4 c Frozen Blueberries (or fresh)
  • 1 Apple
  • Fill with Apple Cider until the fruit is almost covered
  • 2-3 tbsp blend of (hemp hearts, bee pollen, chia (ground), buckwheat (ground), flax (ground)

Cherry, Grape, & Avocado Smoothie

Use a full sized blender for this recipe.

Amaranth & Quinoa Flat Bread & Stir Fry Wraps

Posted by Pam Timmermans on Tuesday, May 28, 2013, In : Recipes & Meal Ideas
Wow, I didn't know how these would turn out, but they are really good.  Great texture, they roll well, and they're yummy.

A friend said that she had a lot of trouble finding a good flat bread recipe that was gluten free, so I was surprised when these turned out so well the first try.  I guess I'm getting good at making elimination diet recipes.

So, when I made this, I didn't have amaranth flour, so I ground up amaranth seeds in a coffee grinder (actually, I'm lying, I used my Cuisinart Magic Bu...

Sweet Potato Fries

Posted by Pam Timmermans on Friday, May 24, 2013, In : Recipes & Meal Ideas
These are sooo good and pretty easy.  My super fussy 3 year old even loved them.  So did my hubby.  Only the 6 year old wasn't a fan.

Here's how it's done.

Sweet Potato Fries

  • Preheat oven to 450 degrees F
  • Peel a big sweet potato
  • Cut into 1/2" strips
  • Separately, mix 1/4 c olive oil, 1 tsp sea salt, 1/4 tsp pepper
  • Lightly coat the sweet potatoes in the olive oil mix
  • Place sweet potatoes on a non stick cookie sheet, making sure that they are not touching
  • Cook for 15 mins, flip, cook for another 10 mins.

Apple Chips & Leather - Just Apples & Cinnamon

Posted by Pam Timmermans on Wednesday, May 22, 2013, In : Recipes & Meal Ideas
These make such a great snack and are great for people with dietary limitations and those on an Elimination Diet.  Plus, my kids love them.

I recommend using the Excalibur Food Dehydrator.  It's by far the best dehydrator I have ever used.  It dries your food evenly and I don't even have to turn my food (maybe the odd thing, but usually not).  We usually make apple chips, banana chips, beef jerky, fruit leather, dog treats, and I'm really looking forward to making crackers and beet and sweet p...

Pasta Sauce on an Elimination Diet

Posted by Pam Timmermans on Thursday, May 16, 2013, In : Recipes & Meal Ideas
I have been wondering for awhile how I was going to manage pasta sauce on this diet.  No tomatoes...SERIOUSLY?  I love having pasta once in awhile and with the new GoGo Quinoa pasta (white and red quinoa is my favourite), I really wanted some.  I remembered making a pasta sauce awhile ago where I roasted all of the veggies and it was really good.  I shared it with a friend and my husband and they both loved it.  My husband has been complaining about some of the meals I have made lately and he...

Withdrawal Symptoms - Day 10

Posted by Pam Timmermans on Thursday, May 16, 2013, In : Withdrawal Symptoms
Wow, I hurt everywhere this morning.  The tops of my thighs are sore, my hand still feels inflamed, my neck is stiff, as well as my back.  This is crazy.

No bowel movement so far, but I have to say, I'm not giving off toxic gas anymore.  This is a definite bonus.  I'm really happy about this.

I should also take note that I've been extremely grumpy since I started this diet.  I don't know if I'm just frustrated at not being able to eat foods I love or if it's a symptom related to ridding my body...

Snack - Salmon Cakes

Posted by Pam Timmermans on Sunday, May 12, 2013, In : Recipes & Meal Ideas
This is a decent snack.  I think I could take or leave the sunflower seed spread, but it does add more nutrition, so maybe try it with and without and see what suits you best.

Salmon Cakes

  • Brown Rice Cakes
  • Salmon (I used canned in water, look for no salt)
  • Dill Weed
  • Sea Salt
  • Sunflower Seed Spread

Top the rice cakes with a bit of sunflower seed spread, then salmon, dill, and sea salt to taste.

Withdrawal Symptoms Day 7

Posted by Pam Timmermans on Sunday, May 12, 2013, In : Withdrawal Symptoms
I consulted the friend that I am doing this diet with and she said that the detoxification length for this diet is 20 days, so I might have symptoms for awhile yet.

This morning I felt quite ill.  My stomach hurt, I felt nauseous, I had to run to the bathroom 3 times with diarrhea, I was gassy, and my neck rash was bothering me again.  It's 10am now and I feel much better now.

I also discovered yesterday that it's that time of the month, so I'm wondering if my blemishes and grumpy mood might be...

Withdrawal Symptoms Day 6

Posted by Pam Timmermans on Saturday, May 11, 2013, In : Withdrawal Symptoms
Hmmm, I thought withdrawal symptoms were only supposed to last for 2-5 days.  I guess that range needs to be a little more flexible.  I feel fine, but I did have an interesting bowel movement this morning and I'm still passing gas.  However, it is different.  It doesn't smell nearly as toxic and it has a whole new fragrance.  Still not pleasant, but better.  I did a little reading and it seems that what you eat, affects the smell of your gas, so I guess my change in diet has changed the smell...

Delicious Turkey Soup on an Elimination Diet

Posted by Pam Timmermans on Friday, May 10, 2013, In : Recipes & Meal Ideas
This recipe is great for several meals.

First, cook a turkey.  Free range or organic is best, but use what you can get (just not Butterball).  When I did my turkey, I made a small mixture of olive oil, dried thyme, and rosemary and put it over the turkey, covered for most of the cooking, then removed the cover for the last 30 mins and basted.  It was really good.  I made a gravy after by adding Herbamare, more thyme, rosemary, black pepper, and thickened with tapioca starch (mix with a touch o...

List of Products to Help You Complete an Elimination Diet

GoGo Quinoa - Organic gluten-free and vegan pastas made of red & white quinoa, amaranth, and rice

Staying Motivated

Posted by Pam Timmermans on Friday, May 10, 2013, In : Recipes & Meal Ideas
When I started the elimination diet, I fretted about all the fruits and vegetables and other foods that I couldn't eat.  Just a little overwhelming, since I eat these foods regularly.  So, I thought it best to stay positive and make a list of things I CAN EAT.  After completing my list, I definitely felt like I had more options that I initially thought.

Day 4 Withdrawal Symptoms

Posted by Pam Timmermans on Thursday, May 9, 2013, In : Withdrawal Symptoms
Wow!!!  I am starting to think that sneaking in a milkshake before this diet was a bad idea.  My toxic experience in the bathroom this morning was horrifying.  I guess it does take a few days for "food" (and I use this term loosely) to really go through your body.  This would explain why there seemed to be no pattern to my prior symptoms and what I had just eaten.  It's all starting to make sense now.  My poor intestines.

I am happy to say though, I felt pretty good the rest of the day.

Slow Cooked Apple Venison

Day 3 Withdrawal Symptoms

Posted by Pam Timmermans on Wednesday, May 8, 2013, In : Withdrawal Symptoms
This morning, I woke up feeling rather spunky.  I still felt a bit of carpal tunnel, but all in all, I was in very good spirits.  It was a beautiful day and life felt good.  So, why was I completely rude to the lady at the vehicle licensing center?  I have no idea.  For a brief bit, I felt irritable and grouchy.  Thank goodness I had the sensibility to apologize to her.  I realized how unreasonable I was being, so I tried my hardest to be normal.  I have to say, I am feeling much better now. ...

Day 2 Withdrawal Symptoms

Posted by Pam Timmermans on Tuesday, May 7, 2013, In : Withdrawal Symptoms
During the past year or so, I have noticed some carpal tunnel syndrome in my right wrist.  It tends to flare up when I am doing repetitive tasks on my computer.  I haven't had any trouble from it in awhile, but it started up again today.  I thought it was odd, because I'm not doing anything repetitive at the moment.

When I was reading The Whole Life Nutrition Cookbook last night, it stated that eating foods that your body is sensitive to, can cause inflammation in the body.  So, it would make...

Do's and Don'ts for Breakfast and Lunch

This morning, I made the worst combination ever.  It sounded good in theory, but was terrible.  I spend all morning trying to nibble at it.  Thankfully, my friend saved me with the most delicious Turkey Soup I have ever had (she is also doing the elimination diet).  I will definitely get her recipe and add it to this blog.

So, here is the offending combination:

Day 1 Withdrawal Symptoms

Posted by Pam Timmermans on Tuesday, May 7, 2013, In : Withdrawal Symptoms
Well, I did know that there could be some withdrawal symptoms, but I was a little taken by surprise.  My son is still young and often wakes me up during the night.  So, as per usual, I was woken up at about 1am.  Usually, I just get up and I feel fine enough, assuming that sleep deprivation is normal.  This time, I actually felt kind of hung over.  It was so strange.  I had massive back pain, which for me, comes and goes, I was totally bloated, which I haven't experienced that in awhile and a...

Sweet Potato & Zucchini Bake

Posted by Pam Timmermans on Tuesday, May 7, 2013, In : Recipes & Meal Ideas
I make this recipe quite often with what I'm sure is an MSG filled vegetable seasoning.  But it's so good.  I decided to try a new product today and it's quite spectacular.  It's called Herbamare and it's just a blend of herbs and natural sea salt.  It's quite healthy (except for the salt, but at least it's sea salt), it has no MSG, and it's delicious.

Sweet Potato and Zucchini Bake

  • 1 Sweet Potato (peel & cut 1/2" thick)
  • 1 Zucchini (cut 1/2" thick)

  • 3 Garlic Cloves

The Ultimate Smoothie for the Elimination Dieter

Posted by Pam Timmermans on Monday, May 6, 2013, In : Recipes & Meal Ideas

Unfortunately, many of my usual smoothie must haves are a no no, so I had to do some improvising.  I'm sad to see my bananas, pineapple, orange juice, and agave nectar leave the mix, but I am experimenting with some new things.

Usually, I am all about avocados, mangos, hemp hearts, ground flax, ground chia seeds, bee pollen, and of course my eliminated items :(  So, I added some blueberries, raspberries, and I even tried something green....kale.  Now I don't suggest overdoing it on the ...

Ok, so, when I decided to start this diet, I realized, I will have to cut out a lot of excellent foods for awhile....and I love food.

So, the week before starting, I totally cheated.  I know I can't eat dairy, but I had a big milkshake yesterday and a big honking burger.  It was awesome!!!  And to my surprise, the expected cramps and explosion from the other end did not happen.  I guess all my avoiding of dairy, made things improve a little bit.  I'm hoping this diet allows me to have ...

Reasons to Start an Elimination Diet

Posted by Pam Timmermans on Monday, May 6, 2013, In : Pre Diet

Taking the step to do an elimination diet is not an easy decision.  But, after having tests at the doctor's stating that I'm in perfect health, I have to wonder why I have so many odd symptoms.  The doctor suggested that it's dietary, but what exactly?

I have to say, my odd, extremely itchy neck rash that occurs once a year like clockwork is not fun.  The constant loose stools and horrendous gas is really quite embarrassing.  Not to mention that I'm an extremely social person, always do...
